Turmeric – 2.5 tablespoons
Sea salt – ½ teaspoon
Table salt – 1 tablespoon
Onion powder – 1.5 tablespoons
Garlic powder – 1 tablespoon
Cinnamon – 1.5 tablespoons
Ginger powder – 1 tablespoon
Toast the Seeds:
Warm a pan over low heat. Add the coriander seeds and toast for 1 minute, stirring every 10 seconds to prevent burning. Then add the cardamom pods and toast for an additional 30 seconds. Grind both together.
Mix the Spices:
Reheat the pan slightly on low heat. Add the ground coriander and cardamom. Then add all the remaining spices to the pan and mix them gently on low heat. Turn off the heat — the goal is just to warm and combine them, not to fry the spices.
