Despite its name, this dish has nothing to do with various kebabs and is made with vegetables. Tas Kebab can be made with chicken or ground meat. Ingredients for making meat Tas Kebab
This amount serves 3 to 4 people:

  • Meat

  • Quince

  • Carrots

  • Potatoes

  • Onions

  • Tomatoes

  • Tomato paste

  • Salt, turmeric, and black pepper

  • Dried plums (aloobukhara)

  • Oil, verjuice (ab-ghooreh), or lemon juice (optional)

Instructions:

  1. Prepare the Meat: Cut the lamb into medium-sized pieces.

  2. Sauté Onions: In a pot, heat some oil and sauté sliced onions until golden.

  3. Brown the Meat: Add the lamb pieces and cook until browned on all sides.

  4. Add Vegetables and Spices: Add chopped quince, carrots, potatoes, and tomatoes to the pot. Stir in tomato paste, salt, turmeric, and black pepper.

  5. Add Dried Plums: Toss in dried plums to add a subtle sweetness and richness.

  6. Add Liquid: Pour enough water (or broth) to cover the ingredients.

  7. Simmer: Cover and simmer on low heat until the meat is tender and the vegetables are cooked through, about 1.5 to 2 hours.

  8. Adjust Flavor: Add verjuice or lemon juice to taste for a slight tanginess.

  9. Serve: Serve hot with rice or fresh bread.
