It can be used as an iftar or dessert during the holy month of Ramadan or during religious ceremonies and mourning events. This method may be the most common and popular way to make pumpkin halva. In this method, we use pastry flour to create the texture of the halva. Pastry flour makes the halva translucent and colorful, while eliminating the raw taste of the flour. The ingredients and preparation steps for this halva are as follows:
Pumpkin puree: 1.5 cups
Sugar: 1.5 cups
Water: ½ cup
Rosewater: ½ cup
Flour: 1 cup
Vegetable oil: ½ cup
Brewed saffron: 2 tablespoons
Step 1:
To prepare the pumpkin halva, first, we need to make the pumpkin puree. To do this, fill a suitable pot halfway with water and place it over high heat so that the water starts boiling quickly.
Step 2:
Now, chop the pumpkin and place it in a metal strainer. Place the strainer on top of the pot so the pumpkin is steamed. If you have a steamer, you can also use that.
Step 3:
Once the pumpkin is fully cooked, remove the skin and place it in a suitable bowl. Use the back of a fork to mash the pumpkin until it is completely smooth and uniform, like a puree.
Step 4:
In this step, pour 1.5 cups of the pumpkin puree into a suitable pot, place it over medium heat, and stir the puree occasionally until all the water evaporates.
Step 5:
Once the water from the pumpkin has completely evaporated, add sugar, brewed saffron, rosewater, and water to the pot. Let the sugar dissolve completely, then remove the pot from the heat.
Step 6:
In this step, sift the flour into a suitable pan. Place the pan over low heat and gently roast the flour for about 30 minutes until its raw taste is removed. Once the flour changes color, add the oil.
Step 7:
Now, mix the flour and oil well until fully combined, then add the pumpkin puree mixture to the pan. Stir the halva patiently until it starts to separate from the sides of the pan and gathers in the center.
Step 8:
Once you can move the halva in a cradle-like motion in the pan, your halva is ready. Finally, pour the halva into your desired serving dish and garnish as you like. For a more elegant presentation, you can pipe the halva into a decorative shape using a pastry bag.
