Saed News: Tomato and eggplant stew with ground meat is one of the most delicious dishes that you can serve with fresh bread or rice. This traditional and authentic Iranian dish is easy to prepare and takes very little time. If you enjoy dishes that include eggplant, be sure to try this tasty meal.
Making the Sauce:
Fry some onions or use onion purée, then add salt, pepper, spices, and a tablespoon of tomato paste and sauté it.
Now purée two tomatoes and add them to the mixture.
If you like, you can also use fresh garlic and thin slices of green chili.
Just make sure to soak the sliced eggplants in water with salt and lemon juice so they soften and are easier to shape.
You can either place them in a pan or bake them in the oven or microwave at 180°C (356°F) for 30 to 40 minutes.
