How to Make Delicious Kazan Kebab the Traditional Turkish Way — The Same Kebab Iranians Love

According to the Saed News cooking service, Kazan Kebab is a very delicious and elegant Turkish dish with a wonderful taste, which you can easily prepare at home using eggplant and ground meat. If you enjoy the flavor of eggplant combined with meat, be sure to try making Kazan Kebab. You can prepare this tasty dish in the oven or in a pan without using an oven, and serve it with a delicious rice dish.

Ingredients for Kazan Kebab

Serves 4

  • Ground meat – 500 grams

  • Eggplant – 4 medium-sized

  • Tomatoes – 500 grams

  • Garlic – 6 cloves

  • Bell pepper – 1

  • Tomato paste – 1 tablespoon

  • Salt and black pepper – to taste

  • Turmeric and oil – as needed


Instructions for Preparing Kazan Kebab

Step 1:
To prepare Turkish Kazan Kebab, first peel the eggplants and slice them into thin pieces. Sprinkle some salt on them and let them sit for 30 minutes to remove any bitterness.

Step 2:
Next, finely chop the garlic and sauté it with a little oil in a suitable pan. Since garlic burns quickly, only sauté it until fragrant.

Step 3:
Chop the tomatoes finely (it's better to peel them first) and add them to the pan along with some salt, black pepper, and turmeric. Mix well until the sauce is uniform.

Step 4:
Now add the tomato paste and sauté it in the center of the pan to remove its raw taste. Then reduce the heat and let the sauce simmer. Meanwhile, rinse and dry the eggplants.

Step 5:
Fry the eggplants in a little oil and set them aside. Then mix the ground meat with salt, black pepper, turmeric, and your preferred spices. Knead well so the spices absorb into the meat.

Step 6:
Preheat the oven to 180°C (356°F). Choose a Pyrex (oven-safe) dish and pour in the thickened sauce.

Step 7:
Shape the ground meat into small patty-like pieces and arrange them alternately with the eggplants in the dish. Chop the bell pepper and sprinkle it evenly over the top.

Step 8:
Cover the dish with aluminum foil and bake it in the middle rack of the oven for 30 to 40 minutes. Once done, serve the kebab in your desired dish with bread or rice.
