How to Make Kermanshahi Chicken Qorma: A Delicious Traditional Dish from the Heart of History

Ingredients
For 4 people

  • Chicken breast: 2 pieces

  • Medium onions: 2 pieces

  • Medium potatoes: 3 pieces

  • Tomato paste: 1 tablespoon

  • Bell pepper: 1 piece

  • Tomatoes: 2 pieces

  • Saffron (brewed): to taste

  • Salt, black pepper, turmeric: as needed

  • Oil: as needed

How to Prepare Kermanshahi Chicken Qorma

Step 1
To make the festive chicken qorma, first chop the onions finely and place them in a pan with some oil. Heat it on medium heat until warm, then add the onions and sauté them until they become soft.

Add turmeric to the pan and sauté until the onions turn a nice golden color. Then, chop the bell pepper into small pieces according to your taste and add it to the pan. Sauté for a bit more.

Next, add black pepper, salt, and cinnamon powder to taste. Sauté for about 2 minutes, mixing everything together so the spices release their aroma.

Now, add the tomato paste (or pureed tomatoes) to the pan and sauté until the paste changes color and deepens. You can substitute tomato paste with pureed tomatoes if preferred.

Clean the chicken breasts and chop them into cubes, the size of your choice. Add them to the pan and sauté until the chicken becomes golden. Stir occasionally to make sure all sides of the chicken are browned.

Now, mix some saffron with half a cup of hot water and let it steep. Pour the saffron mixture over the chicken and stir to infuse the chicken with its aroma and color.

Cover the pot and let it simmer on low heat. The chicken will release its own juices, so there’s no need to add extra water. After about an hour, the chicken will be cooked through.

Meanwhile, peel and thinly slice the potatoes into fries, wash them well, and let the excess water drain. Then, in another pan, heat some oil over medium heat and fry the potatoes until crispy.

Once the chicken is cooked and the liquid has evaporated, add the fried potatoes to the chicken. Let them cook together for about 2 minutes on low heat.

For the final step, slice the tomatoes into rings and sauté them in a little oil over low heat. Flip them to cook both sides.
