Tahchin is a delicious and elegant dish that can be served at parties. This dish has many variations and can be made with either meat or chicken. One of the most important ingredients in tahchin is rice.
250 grams of lamb meat
2 cups of rice
1 cup of full-fat yogurt
1 egg yolk
1 onion
5 tablespoons of cooked corn
3 tablespoons of saffron
2 cloves of garlic
Salt, pepper, and oil as needed
In a pot, add oil. Then, add the chopped onion and sauté until golden.
Add the chopped lamb (cut into small pieces like minced meat) along with the chopped garlic and sauté. When the meat turns from red to brownish, add one cup of water. Cover the pot and let the meat cook.
In another pot, bring water to a boil. Add the rice and salt, letting it soften a little. Drain the rice and rinse it with cold water.
In a separate bowl, mix the yogurt, saffron, egg yolk, salt, and pepper together. After draining the rice, add it to this mixture and stir well.
In a non-stick pot, add some oil. Place a layer of the rice and yogurt mixture and flatten it with the back of a spoon.
Shred the fully cooked meat (which has been salted and has absorbed the water) and spread it over the rice layer, pressing it down with the back of the spoon.
For the next layer, repeat with the rice and yogurt mixture, followed by a layer of cooked corn. Continue layering in this manner until all ingredients are used up.
Drizzle some oil on top of the rice, cover the pot with a lid, and use a heat diffuser. Let it cook on low heat until the rice is fully cooked.
After the cooking time is over, flip the tahchin onto a plate and enjoy!
