This dish is a tasty appetizer made from spinach and cheese. It’s perfect for a party or as a delicious dinner option. With a bit of creativity, you can make a new, flavorful meal the whole family will love.
Olive oil (for greasing the pan)
1 cup of milk
1/3 cup of flour
8 eggs
1 tablespoon of mustard
Salt and black pepper to taste
2 cups of chopped spinach
1.5 cups of grated cheddar cheese
Preheat the Oven:
Preheat your oven to 175°C (350°F). Lightly grease a rectangular baking dish (25 x 37 cm). Line the dish with parchment paper, leaving about 3 cm of paper hanging over the edges to use as handles. Lightly grease the paper as well.
Prepare the Mixture:
In a medium bowl, combine the milk and flour, whisking them together until smooth. Add the eggs, mustard, 1 tablespoon of salt, and 1 teaspoon of black pepper, and whisk until well blended.
Bake the Omelette:
Pour the egg mixture into the prepared baking dish, and spread the chopped spinach evenly on top. Bake for 10-12 minutes, or until the edges of the omelette are set and pulling away from the sides of the dish.
Add Cheese:
Sprinkle the grated cheddar cheese over the omelette and return it to the oven for 2-4 more minutes, or until the cheese has melted.
Roll the Omelette:
Remove the omelette from the oven. Use the parchment paper handles to lift it out of the dish. Peel off the parchment paper and roll the omelette tightly. Use a sharp knife to slice the roll into portions and serve hot.
For the best flavor, use young, tender spinach leaves.
If you want to make the dish lighter, reduce the amount of cheese or omit it entirely.
For an extra flavor boost, try adding grated garlic to the omelette mixture.
