How to Prepare Eggplant and Mushroom Galette; A Meatless Dish with Exceptional Aroma and Flavor!

Galette (galette) is considered part of the tart and pie family. In fact, the galette dough is the same as tart and pie dough, with the difference that galette dough, unlike tart, does not require any mold and must be shaped by hand! Surely one of the reasons for galette’s popularity is this very point—it doesn’t need a mold and is easy and simple to make!

Galettes can be made sweet and served as cakes, pastries, or desserts, or they can be filled with savory ingredients to create an attractive and delicious dish. Surely these days you have seen various galettes on social media that you wished to make yourself.

Ingredients for Galette Dough:

  • 1 and 1/3 cups flour

  • 80 grams butter

  • 1/4 teaspoon salt

  • 3 to 4 tablespoons cold water


Preparation:

  1. Cut the butter into 1 cm cubes. Put the flour into a food processor. Add the cubed butter to the flour.

  2. Add salt at this stage. Then turn on the machine and pulse a few times until the mixture resembles breadcrumbs.

  3. Gradually add the ice water to the flour and butter mixture. Start with 2 to 3 tablespoons, and if needed, add 1 or 2 more tablespoons. Continue until the flour, water, and butter mixture gradually takes on a doughy texture and eventually comes together.

  4. Wrap the dough in plastic wrap and refrigerate for at least half an hour. Note: Make sure the butter is completely cold when making the dough. Cut the cold butter and mix it with the flour.


For the Galette Filling, you will need:

  • 100 grams cream cheese or feta cheese

  • 2 tablespoons strained yogurt

  • 2 tablespoons olive oil

  • 1 clove garlic

  • A few fresh basil leaves

  • 1/2 teaspoon thyme

  • 1/4 teaspoon black pepper


Vegetables include:

  • 1 slender eggplant

  • 2 mushrooms

  • Cherry tomatoes as needed

  • Zucchini (optional)

  • 1 small red onion


Preparation:

  • For the filling, put cream cheese into a mixer or food processor. Add the strained yogurt.

  1. Add the basil leaves to the yogurt and cheese mixture. Then add olive oil and one clove of garlic.

  2. Finally, add thyme and black pepper. Turn on the machine and pulse a few times until the ingredients are well blended and creamy.

  3. Slice the eggplant and zucchini into rings and lightly fry them in a pan. You may add a little oil, but just enough to lightly grease the pan.

  4. Cook the mushrooms similarly with a bit of lemon juice.

After preparing the filling and the vegetables, take the galette dough out of the fridge. Dust your work surface with flour, then roll out the dough with a rolling pin.

  1. Roll the dough into a large flat circle. It’s best to roll the dough directly on parchment paper to make transferring it to the baking tray easier.

Trim the dough edges with a cutter or knife to make it a neat, even circle.

  1. Transfer the dough to the baking tray. Now spread the cheese filling evenly over the dough using a spoon or spatula.

  2. When spreading the cheese filling, leave a 2 cm border from the edge of the dough. After spreading the cheese filling, place the fried vegetables — eggplant, zucchini, and mushrooms — on top.

  3. Cut the cherry tomatoes and add them over the filling. Finally, place the slices of red onion on top in any pattern you like.

Then fold the edges of the dough over the filling and the cheese layer.

  1. Fold the dough edges until the galette takes shape as shown. Brush the edges with egg yolk. To do this, beat one egg yolk until smooth.

  2. Using a brush, apply the egg yolk all over the folded edges of the dough. Sprinkle some sesame seeds over the edges and egg-washed areas.

Place the baking tray in an oven preheated to 180°C (356°F) for 40 minutes. After the time has passed and the dough turns golden, remove it from the oven.

Your beautiful galette is ready!


Important Notes for Making Galette:

  • You can substitute any vegetables for the ones in this galette recipe.

  • You can make it just with tomatoes and mushrooms or tomatoes and eggplant.

  • For the filling, instead of strained yogurt or cream cheese/feta, you can use mayonnaise or only cream cheese.

  • If you like, you can put mozzarella or pizza cheese under the vegetables.

  • You can also use pesto sauce as an alternative for the filling.
