The main season for making pickles is usually fall; however, there are some pickles whose ingredients can be prepared year-round. Eggplant pickle is one of the most delicious and popular Iranian pickles, with various types made using different ingredients and herbs. Eggplant pickle is typically made in different ways, all of which are tasty. Eggplant and barberry pickle is a type of eggplant pickle that is made in a very easy and hassle-free method, and because it contains barberries, it has a very unique flavor. Ingredients:

  • 10 eggplants

  • 1 cup barberries

  • 1 cup chopped aromatic herbs (mint, garlic leaves, and cilantro)

  • Vinegar (as needed)

  • 2 pieces of rock candy

  • Salt, pepper, and ground coriander seeds (as needed)

Instructions: To make this delicious eggplant pickle, first wash the eggplants thoroughly, peel them, and slice them into rings. Now, place the sliced eggplants with salt and vinegar into a suitable pot and heat them on the stove until the vinegar starts boiling. The vinegar should be enough to cover the eggplants. Once the vinegar starts boiling, add the rock candy to the pot and let it simmer until the eggplants soften. Make sure the eggplants are soft but not mushy. Now, remove the eggplants and vinegar from the heat and transfer them to a bowl to cool. Once cooled, add the barberries, chopped herbs, salt, pepper, and ground coriander seeds, and stir the pickle. After the pickle has completely cooled, transfer it to dry, clean jars and store it in a cool place. Enjoy!

  1. Eggplants are a favorite vegetable of Iranians and are used in many dishes. They are rich in vitamins, calcium, phosphorus, fiber, potassium, have anti-cancer properties, and are very beneficial for the heart. When buying eggplants, try to choose the first harvest, as second and third harvests are often seedy and bitter. For making eggplant pickle, it's better to use long and meaty eggplants.

  2. There are different types of vinegar, and the best type for making pickle is grape vinegar. Grape vinegar is red in color and has a milder taste than white vinegar.

  3. Do not omit the rock candy from the recipe. Adding rock candy helps reduce the sharpness of the vinegar, giving your pickle a milder taste.

  4. If you have access to northern aromatic herbs, you can substitute the herbs in the recipe with these.

  5. Always use a clean and dry glass jar for your pickle. If the jar is not completely clean and dry, the pickle may mold. The lid of the jar should not be rusty or dented. Close the jar tightly to avoid air exposure, as air will spoil the pickle.
