Although traditionally cooked in regular pots, using a restaurant-style rice cooker ensures even cooking and a beautifully molded final dish.

Soaked rice: 4 cups
Salt: 1 tablespoon
Solid oil or butter: 1/3 cup
Brewed saffron: 3 tablespoons
Egg: 1
Sour cream: 2 tablespoons
Water: As needed
Soak the rice for at least 2 hours to help it cook more evenly. Once soaked, drain the water and set the rice aside for cooking.
Once the rice is semi-cooked and has absorbed water, take 2-3 ladles of it and mix it with the egg and saffron mixture. This ensures that the bottom layer of the Tahchin turns out evenly golden and aromatic. Stir gently so the saffron colors all the rice grains.
Grease the bottom of the rice cooker with oil to prevent sticking and to create a crisp, uniform crust. Spread the saffron-infused rice evenly at the bottom and smooth it out with a spoon. This layer will form the signature golden crust of Tahchin.
Carefully pour the plain rice over the saffron layer and spread it evenly. Use a ladle to gently press the rice so the layers settle well and maintain a uniform shape.
