Ingredients:
2 large tomatoes, diced
1 large cucumber, diced
1 medium onion, finely chopped
2 tablespoons fresh parsley or mint, chopped
Juice of 1 lemon or lime
Olive oil
Salt and pepper to taste
Instructions:
In a bowl, combine the diced tomatoes, cucumber, onion, and chopped herbs.
Drizzle with olive oil and lemon/lime juice, then sprinkle with salt and pepper.
Toss gently to combine and serve chilled or at room temperature.

2 large potatoes, boiled and diced
2 large eggs, hard-boiled and diced
1 cup cooked chicken or tuna, shredded

Instructions:
