1. Shirazi Salad (Salad Shirazi)

Ingredients:

  • 2 large tomatoes, diced

  • 1 large cucumber, diced

  • 1 medium onion, finely chopped

  • 2 tablespoons fresh parsley or mint, chopped

  • Juice of 1 lemon or lime

  • Olive oil

  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the diced tomatoes, cucumber, onion, and chopped herbs.

  2. Drizzle with olive oil and lemon/lime juice, then sprinkle with salt and pepper.

  3. Toss gently to combine and serve chilled or at room temperature.

2. Salad Olivieh (Iranian Potato Salad)

Ingredients:

  • 2 large potatoes, boiled and diced

  • 2 large eggs, hard-boiled and diced

  • 1 cup cooked chicken or tuna, shredded

  • 1 cup peas (canned or frozen, thawed)

  • 1/2 cup mayonnaise
