1. Shirazi Salad (Salad Shirazi)

Ingredients:

  • 2 large tomatoes, diced

  • 1 large cucumber, diced

  • 1 medium onion, finely chopped

  • 2 tablespoons fresh parsley or mint, chopped

  • Juice of 1 lemon or lime

  • Olive oil

  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the diced tomatoes, cucumber, onion, and chopped herbs.

  2. Drizzle with olive oil and lemon/lime juice, then sprinkle with salt and pepper.

  3. Toss gently to combine and serve chilled or at room temperature.

2. Salad Olivieh (Iranian Potato Salad)

Ingredients:

  • 2 large potatoes, boiled and diced

  • 2 large eggs, hard-boiled and diced

  • 1 cup cooked chicken or tuna, shredded

  • 1 cup peas (canned or frozen, thawed)

  • 1/2 cup mayonnaise

  • 1 tablespoon mustard

  • Salt, pepper, and lemon juice to taste

Instructions:

  1. In a large bowl, combine the diced potatoes, hard-boiled eggs, chicken or tuna, and peas.

  2. In a separate bowl, mix the mayonnaise, mustard, salt, pepper, and lemon juice.

  3. Gently fold the mayonnaise mixture into the potato mixture until combined. Serve chilled.

3. Seasonal Salad

Ingredients:

  • 2 small heads of lettuce, chopped

  • 3 cucumbers, sliced

  • 3 tomatoes, sliced

  • 2 carrots, grated

  • Sugar, to taste

  • 1 small head of red cabbage, sliced

  • 1 small cup of mayonnaise

  • Lemon juice or bitter orange juice, as needed

  • Juice of 1 orange

  • A pinch of salt

Instructions:

  1. Place a salad bowl next to you. Chop the lettuce and slice the cabbage into strips.

  2. Slice the tomatoes and cucumbers into rounds.

  3. Add the lettuce to the serving dish and arrange the cabbage, cucumber, and tomato slices on top of the lettuce as desired.

  4. Grate the carrots over the salad.

  5. For the dressing, combine salt, lemon juice, and sugar with the mayonnaise, mixing well.

  6. For a tastier dressing, squeeze the juice of one orange or bitter orange and add it to the mixture.

  7. Pour the dressing over the salad and serve.
