The combination of rich chocolate cake and smooth Mahalebi, a delicate dessert, creates an extraordinary flavor experience that you must try at least once. Let's get started with the recipe for this delectable cake.

Ingredients

  • Pastry flour: 2 cups

  • Eggs: 4

  • Sugar: 1 cup

  • Warm milk: 1 cup

  • Vegetable oil: 1/2 cup

  • Cocoa powder: 2 tablespoons

  • Baking powder: 2 teaspoons

  • Vanilla: 1/2 teaspoon

Ingredients for Mahalebi

  • Milk: 2 cups

  • Cream: 100 grams

  • Cornstarch: 2 tablespoons

  • Pastry flour: 1 tablespoon

  • Sugar: 1/3 cup

Instructions

To make this delicious cake, it's best to use a hollow or shallow tart pan. Start by beating the eggs with sugar and vanilla in a suitable bowl using an electric mixer on high speed for 5 minutes until creamy and pale. Next, add the oil and beat for 30 seconds, then add the warm milk and beat for another 30 seconds. Set aside the mixer. Sift the flour, baking powder, salt, and cocoa powder together, then add them to the batter in three stages, folding gently with a spatula until well combined. Pour the batter into the prepared pan and bake in a preheated oven at 180 degrees Celsius for 45 minutes. Once baked, remove the pan from the oven and let the cake cool before transferring it to a serving dish.

While the cake cools, mix the flour, cornstarch, cream, milk, and sugar in a suitable saucepan, stirring until combined. Place the saucepan on the stove and cook over medium heat, stirring constantly until the mixture thickens to a pudding-like consistency. Remove from heat and let it cool.

Once both the cake and Mahalebi have cooled, pour the Mahalebi over the cake and sift cocoa powder on top. Your delicious cake is now ready to serve. Enjoy!

Important Tips for Baking Cakes at Home

  1. Bring Ingredients to Room Temperature: Ensure all ingredients are at room temperature before starting. Take them out of the fridge at least 30 minutes before you begin. Also, sift dry ingredients like flour and cocoa powder three times to aerate and lighten them, resulting in a better cake texture.

  2. Accurate Oven Temperature: The oven temperature plays a crucial role in baking. Ensure your oven is preheated to the exact temperature mentioned in the recipe and maintains it throughout baking. Different ovens may require slight adjustments; using an oven thermometer can help achieve precise temperatures.

  3. Use Digital Scales and Standard Measuring Cups: Accurate measurements are essential for baking. Digital scales are more precise than measuring cups. If using cups, stir dry ingredients like flour and cocoa powder before measuring to avoid compaction.

  4. Proper Egg Beating: When beating eggs, periodically stop the mixer to scrape down the sides with a spatula to ensure even mixing. Properly beaten eggs eliminate any unpleasant egg smell in the cake.

  5. Correct Pan Size: Use the correct pan size as stated in the recipe. The batter should fill the pan two-thirds full, leaving room for the cake to rise. Experience will help you quickly choose the right pan.

  6. Quality Ingredients: Use high-quality ingredients for the best results. Low-quality flour, for example, can lead to a dense cake even if all other steps are followed correctly.

  7. No Peeking: Do not open the oven door before 30 minutes to prevent the cake from collapsing.

  8. Be Patient and Follow the Recipe: Follow the recipe steps carefully and use good-quality ingredients to achieve the best results. Happy baking!
